I think that this Amigos Tacos has changed to a Robertos, but they are pretty much the same, if this is the one next to my favorite sushi place, Kobe Sushi Bistro. -

I tore the bread up the night before and precooked the sausage ahead of time. Morning prep time was 5 mins. You can make this super healthy by using whole wheat french bread, egg beaters and low fat cheese and milk. Also you could dress it up buy adding veggies such as asparagus, bell peppers, onions, etc. The littlens gave it a 1 loaf french bread, torn into pieces. 6 eggs 1/4 cup milk 1 package spicy Italian chicken sausage (I used Fresh and Easy Fiesta Chicken sausage), removed from casing and cooked. 8oz Monterey Jack, shredded Spices to your taste Preheat oven to 350. Spray pan with cooking spray. Placed the bread pieces in the pan. Beat eggs, milk and spices. Pour over the bread. Add remaining ingredients. Kick back and enjoy a cup of coffee while baking for 25 mintues, until top is a golden brown. Let stand for 5 minutes and dig in! Like this

My favorite trip of the year is usually Christmas.. without Jill and Charlie, it just wasn't the same.. But I don't think anything could have topped of MLK weekend as my favorite trip this year.. and Mike's littlest Justin's first big dunes ride! -

This past Saturday I had the opportunity to use some real horsepower!!! I couldn't have picked a better day to spend up in the mountanis trail riding horse back. The staff at Mt Charleston Trail Rides were friendly and awesome! And the horses are well taken care of. I arrived about 30 mins early and chatted and helped out getting ready for the ride. They put me on one of the "wranglers" horses due to my experience and invited me back to exchange help for rides anythime I wanted. I loved meadering through the peacefulness of the mountains. The weather was spectacular! What a great day :.)

I could be Charlie's date Sounds all good to me. Maybe a couple of Saturday or Sunday dirt rides up in the cooler climate of the mountains? Those have been good times in the past. -

It was a great time. Lots of laughing when you guys came to visit. I love my pink thong :laughing: Not sure what flight for life came in for, but did help out by waiting for the ambulance to show up for a guy who rolled his ranger down the tall part of a finger dune. One of the other guys in our camp talked with him the next day and he was pk. Two calls came in at the same time. I am not sure what happened to the other guy, he was at the ranger station with a pretty big gash on his head and complaining of chest pain. I just hope everyone is ok and well. -
Got there early evening 3:30ish on Friday. Absolutely gorgeous weather.. teeny bit warm, to warm for a fire Friday evening. Got busy tearing up the dunes right after set up, got in two good runs before dark. Back to camp for dinner, drinks and visiting. Still a bit ansty for riding, another in our camp wanted to hit up comp, so off we went. Hit the hill a couple of times, visited with some people who were out there, then it was back to camp for more drinks and visiting. Up with the sun to the start of another gorgeous day, little bit of breeze kept it from being super hot. Several great runs in. Started mocking the weather and its 88 MHP winds around 1:30 or so... guess the wind gods didn't like being mocked.. cause probably 5:00ish (you know how dune time goes) the winds decided to pick up like crazy.. shook the hauler so bad during dinner, the left over coffee looked like the ocean, that Mike decided to move the hauler to go with the wind. Obviously it was going to be an indoor evening, so drinks and conversations in NE14SAND's motorhome. Still had a great evening only thing missing was the campfire. Woke up the next day to a beautiful morning, little breezy.. perfectly groomed dunes. Breakfast and a ride.. generator had been having some issues, so Mike decided to pack it in early to start work on it. All in all it was a great relaxing weekend, only thing the wind took away from that was the possibility of an evening campfire. Some pics from the weekend. Crazy diehards out in the wind! Haha.. I thought about joining them!

Hands down best weekend of the season. It was nice to have my old role back as photographer for the event. I haven't had a chance to go through them yet. Terry I will get them on a disc and over to you as quickly as I can. Was happy at the turn out, weather wasn't too bad. little bit of drama, but nothing that I am sorry couldn't fix Soo many laughs .. Country karaoke Let's take a trip down the stairs Hauler two step lessons Sailor Jerry Pizza party .. introduced a few more to the glorious pizzazz Sand hill rolling I ended up with a bad azz chair! Great ride Two hour trip to the north pole Thank you everyone for making it a fabulous weekend! I'll post pictures later tonight.
